Sugarless Jams

Make the most the abundant energy that the warmer seasons provide when the fruit trees and hedgerows are blooming with fruits and berries and preserve them as a jam. Here is a sugarless jam option! There are good quality sugarless jams available in health food stores, but they can easily be made at home.

Ingredients:

Fruit

Pinch of salt

Grape or apple juice (4:1 ratio of fruit to juice)

Directions:

Cook apples and salt with juice over low heat in a covered pot for 1/2 hour. Remove cover and reduce until only 1/3 volume of liquid is left. If you want a clear jam, strain off the liquid and use that. If not, leave as it is. Now add any fruit you desire to make the jam and cook as follows:

Strawberries: 10 minutes, Cherries: 30 minutes, Apples: 20 minutes, Oranges (to make marmalade): 1 hour, Apricots: 20 minutes.
